BTF Community Sugar House

Big Tree Farms operates a number of small cooperative maintained Sugarhouses for the production of Heritage Palm Sugars.
The Sugarhouses are essentially commercial kitchens, allowing producers to continue the tradition of small batch coconut palm sugar production and at the same time have a product that is clean, free of any contamination, and consistently of the highest quality.

Our first project with sugar producers was started in the small village of Dawan, on the East Coast of Bali Island. The producers of Dawan were all well above 50 years of age…they’re children all having moved away from the small village to seek a “modern” living in the Capital city of Denpasar or the tourist strip of Kuta Beach.
It was a haunting feeling to be in a Balinese village with only elders and tiny, seemingly parentless children.

This was a traditional product that either needed to attain viability or was destined to be lost with this last group of elders. The sugars produced by these artisans were, and still are the most incredible we have ever experienced.

The flavor was that of dulce de leche…the first time we tasted the freshly molded cakes of coconut palm sugar we simply could not believe that there was no butter or some other similar fat added to enrich the sweetness.

These sugars are Heaven on Earth.
