The Cacao trees that spread across Bali’s lush western mountains grow wild and free…the heritage of Balinese “food forest” cultivation…Nature and volcanic soil tend the cacao’s nutritional needs and as harvest time approaches, villagers arrive to unburden the heavily weighted limbs.
Fruits the color of majestic sunsets are piled in heaps and finely honed blades chop the fruits in two. The seeds, covered in fragrant, sweet meat, are allowed to naturally ferment under banana leaves before being washed, sun-dried and hand-peeled.
